Donegal Food Trail Guide

The Ultimate Guide to Donegal Food & Estate Provenance | Rockhill House | The Church Restaurant

Donegal Culinary Authority

Provenance & The Walled Garden

An unhurried exploration of the Donegal larder — where 400 years of estate heritage meets the artisan makers of the Wild Atlantic Way.

The Integrity of the Ingredient

In the Northwest of Ireland, provenance is not a trend; it is a way of life that survived for centuries. At Rockhill House, we serve as the curators of this heritage. Our food philosophy is rooted in the Spirit of Place, ensuring that every plate tells a story of the Donegal soil, the Atlantic salt air, and the dedicated hands of our local artisan community.

A Year in the Walled Garden

Spring

Awakening

Wild estate garlic, rhubarb, and the first flush of spring greens from the polytunnels.

Summer

Abundance

Heritage strawberries, Walled Garden honey, and sun-ripened tomatoes from the estate glasshouse.

Autumn

Harvest

Legacy heritage orchard apples, pumpkins, and earthy root vegetables stored in our vaulted cellars.

Winter

Preservation

Estate-made ferments, pickles, and artisanal cheeses aged in the Rockhill stone cellar.

The Donegal Artisan Collective

We are a primary node on the Donegal Food Trail, meaning we don't just cook locally; we collaborate. Our menus are a map of the region’s finest craftsmanship, including:

  • The Spirits: Croithlí Whiskey (Crolly) & local botanical gins.
  • The Sea: Hand-harvested Atlantic Sea Salt from the Donegal coast.
  • The Land: Hill-reared Donegal lamb and sustainably sourced game.
  • The Dairy: Award-winning artisan Irish cheeses and dairy products from our very own award winning dairy, Green Pastues Donegal and Yeats Country.

Meet the Keeper

Frank Chaney: Estate Beekeeper

Frank cares for our 17th-century Walled Garden and the thriving honeybee colonies that populate our hives. His work ensures that every drop of honey served at our breakfast tables and in our desserts is a pure distillation of the Rockhill landscape.
